Recipe time: Wondering what to do with your Bertolli?

Right now you can print off a bunch of different Bertolli coupons from (they're mfr coupons though), and it should make for some SUPER cheap Bertolli this month!  Instead of just pouring it over some pasta, I have a delightful recipe for you!  My boyfriend LOVES this recipe, and incorporates some gourmet things but is still really easy.  My mom has started making it too, and has taken it to potlucks and soccer dinners and always gets tons of compliments on it!  The great thing about this recipe is that even though it calls for expensive things like spinach and sun dried tomatoes, you can get them SUPER cheap!  Make sure and buy in bulk so you can choose how much you want, rather than buying a whole container that will go bad.  All you have to do to make this recipe gluten free is to use gluten free pasta.

What you need:
1 lb boneless skinless chicken breast cut into bite sized pieces (I got mine 1.67/lb at Sunflower a few weeks ago)
1 bottle Four Cheese Rosa Bertolli sauce
1 box penne pasta (I used the Barilla that I got for free at Albertson's a month or so ago)
1 box mushrooms, chopped coarsely (1.39/box at Trader Joe's)
1/4 cup sun dried tomatoes (cost about .55 in bulk at sunflower)
1 cup fresh baby spinach (about .85 at Sunflower)
1/2 yellow onion, chopped (.50/lb at Sunflower this week)
2-3 cloves garlic, minced (.50/head at Sunflower)
1 tsp dried oregano
1 tsp dried basil
2 tsp red pepper flakes
Salt and pepper to taste
2 tbs extra virgin olive oil

What you do:
Cook pasta according to directions and drain (you can do this while you are cooking everything else so that it stays warm)
Heat oil in a large skillet over medium high, and add garlic, oregano, basil, and red pepper flakes.  Cook 1 minute.
Add onions and chicken to skillet and cook until chicken is just cooked through (time will vary depending on the size of your chicken pieces, just make sure and check so it doesn't get over cooked)
When chicken is getting close to being cooked, add sun dried tomatoes to the skillet
Once chicken is cooked, pour bottle of sauce into skillet.  Stir until hot.  Add salt and pepper to taste.
Wait until just before you are ready to serve to stir in the spinach, so that it will be soft but not TOO wilted.
Serve over pasta and enjoy!
