Who's Hungry?

Donuts are a delicious and extremely unhealthy way to start your day.  Donut muffins are similarly unhealthy, but slightly less so because they are baked in the oven instead of tossed into a boiling pot of grease.  These muffins (which I just finished making) taste a whole lot like donuts.  Not exactly the same, so I don't want a whole bunch of hate mail when I give you the recipe and you make it and it doesn't taste like a Krispy Kreme, but very similar.  So similar that they can bear the name "Donut Muffins" with pride.  If you are considering making the melted butter and sugar coating "optional", please don't, it will ruin your muffins.  They need all that buttery sugary goodness and so do you!  These were great because I could make them with everything that I already had in the pantry, and I bet you can too.  Here's the recipe:

Donut Muffins
(adapted slightly from the mac & cheese recipe)

What you need:
1 1/2 cups sugar
2 eggs
1/2 cup vegetable oil
1 1/2 cups milk
2 tsp vanilla
3 cups flour
3 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
4 tbs butter
granulated sugar (or powdered sugar, depending on how you like your donuts.)

What you do:
Preheat oven to 350 degrees F
In a large bowl, beat sugar and eggs together first until they are completely combined.
Add oil, milk and vanilla and mix
In a separate bowl, mix together flour, baking powder, salt and nutmeg
Beat dry ingredients into wet ingredients slowly, making sure all lumps are mashed up
Pour batter into greased muffin tins, fill about 1/2 to 2/3 full
Bake for 18-20 minutes, until toothpick or knife comes out clean

To add coating:
Melt butter and pour sugar out onto a plate evenly
Brush butter onto each muffin sparingly (you don't want to get it all soggy) and then roll the muffin around in the sugar until it is completely coated.
