Recipe time! Yummy tomato feta salad

Diced Grape Tomato Salad with Feta and Basil

This is a great recipe for dinner parties or potlucks, it's full of fancy ingredients that say "I know what I'm doing when it comes to salad!"  It's usually a pretty pricey one to make, but with recent coupons you can make it for less than 5.00.  I have made this literally probably 50 times, and it always comes out great.

What you need:
- One 4oz tub of Atheno’s Feta cheese (2 for 5.00 at Albertson’s this week, BOGO coupon from Atheno’s Facebook makes the tub only 1.25!)
-Two pints grape tomatoes (these often go on sale 2 for 3.00 at Sunflower Market, also can be VERY cheap at farmer’s markets this time of year!)
-One very small red onion, or half of a larger one (.77/lb this week at Sunflower Market, cheap at farmer’s markets too!)
-1.5 tsp fresh basil (you can also use “tube” basil, you can find it in the fresh herb section at the grocery store.  It’s just like fresh basil, usually costs about 2.50, and there’s enough in the tube to use it for about a year!  Unless you’re a basil freak.)
-2.5 tbs olive oil (eyeball it)
-2.5 tbs white wine vinegar
-Salt and pepper to taste
You will most likely have the oil and vinegar in your cupboard already, but if you don’t, we do currently have a coupon out for Fillipo Berrigio olive oil, and Heinz vinegar!!

*Note! If you are cooking for 2, cut this recipe in half.  The leftovers will save for about 1 day in the fridge, but not much longer.

What you do
-Cut each tomato in half horizontally and place in a large bowl
-Dice onions very finely and add to bowl
-Add basil (if using fresh, chop as finely as possible) and mix thoroughly
-Mix in oil and vinegar, salt and pepper
-Add full container of feta last
-Enjoy!!
