Calzones: a great idea for dinner

There's a restaurant in Craig, Colorado called Carelli's that has the BEST calzones I've ever eaten.  Justin and I used to go there at least once a week when we lived in CO, and we never once got anything different.  We don't live there anymore, and I had such a huge craving for a Carelli's calzone that I knew something had to be done.  So, I decided to try to replicate them.  Below are the ingredients that I used, but you can really put anything in the world that you want in a calzone!  There's a restaurant in Fort Collins that actually does just that.  They have buffalo chicken, philly cheese steak, chicken bacon ranch, etc.  The possibilities are endless, and the only other things you need are pizza dough and an oven!

What you need: (to make the ones I made)
-Refrigerated pizza dough (or you can make your own, or you can get a boxed mix to make it)
-Mozzarella cheese
-1 onion, sliced
-1 package of mushrooms, sliced
-1 lb ground beef
-2 cloves garlic
-2 tsps of: basil, thyme, oregano, and red pepper flakes
-Ricotta cheese
-1 package pepperoni

What you do:
-Preheat oven to 400 degrees F
-Brown ground beef in a pan with garlic, basil, thyme, oregano, and red pepper flakes, drain
-Roll pizza dough out into a 12x12 inch square, then cut into four squares, and place on baking tray (you will probably need 2 trays)
-Layer cheese, beef, onions, mushrooms, pepperoni and ricotta on one side of the dough square.  Fit as much as you can in there, trust me, the more the better!
-Fold other side of the square over and roll edges so that the calzone is sealed.
-Bake for 30 minutes
-Serve with marinara, parmesan cheese, and red pepper flakes

As you can see above, you can really put anything in the dough that you want, anything at all!  This is a fun meal, and it makes the house smell great!  Enjoy!
