Sweet and Spicy Dijon Slaw

My mom and I made this for dinner the other night kind of just by making it up, and it was a hit!  It's ever so slightly different from regular coleslaw, but not too different.  Basically it is just plain good and not plain boring.
What you need:
1 head cabbage
5 baby carrots
1 small vidalia onion
1/2 cup mayonnaise
1/4 cup dijon mustard
2 teaspoons apple cider vinegar
1/2 cup sugar
1 tsp black pepper
1/2 tsp cayenne pepper
salt and pepper

What you do:
Grate cabbage and carrots together, medium sized grate, into a bowl
Mince onion and add to cabbage and carrots
In a separate small bowl, mix the remaining ingredients until smooth
Pour dressing into veggie mix until thoroughly coated.  Remember to add slowly, you can always add more but you can't take it out if you get too much in there!
Add salt and pepper to taste.
Chill for at least one hour so that the sugar can dissolve and the dressing can absorb into the cabbage
